Blogmas Day 11 – The YUMMIEST No Bake Cookies

I wanted to share our family no bake cookie recipe. This recipe is very easy, but timing is very important. I don’t have a photo because I am making them tomorrow, but I figured I would share while I have time.

Ingredients for pan/pot:

  • 1/2 cup butter
  • 1/2 cup milk
  • 1 teaspoon salt
  • 2 cups sugar
  • 4 tablespoons cocoa powder

Ingredients for bowl:

  • 3 cups quick oats
  • 1/2 cup peanut butter (I like to use generic peanut butter for baking)
  • 1 teaspoon vanilla

Add all ingredients needed to the pot, and all ingredients needed for the bowl into that. The ingredients for the pot should be turned on to boil or high. Mix continuously until it reaches a rolling boil. Once at a rolling boil, set a timer for 70 seconds. Once done, turn burner off and continue stirring for another 10-15 seconds. Then pour the boiled mixture into the bowl mixture. Mix well. Drop by spoonful onto wax paper, parchment paper, or foil. If you did this properly, they should start to set up pretty quickly, if you feel they are still “soupy” you can put them in the fridge. They will taste good no matter the texture. If they don’t set properly, add more time to boil.
